Citrus Trout recipe

Ingredients:

  • 4 trout, scaled and boned
  • 1 lemon
  • 1 lime
  • 1 red onion
  • Handful fresh parsley
  • 125ml orange juice
  • Salt and pepper
  • 2 garlic cloves
  • Olive oil

Method of Preparation:

  1. Slice the lemon and the lime thinly. Finely slice the red onion. Finely chop the parsley. Crush the garlic cloves.

  2. Place the fish in a dish along with the lemon, lime, onion, parsley, orange juice, garlic cloves and salt and pepper.

  3. Heat the olive oil in a frying pan and cook the fish for 7-8 minutes on each side or until flaking and tender.
